Ingredients
- 1 ½ lbs Beef Chuck Roast, cut into 1-inch cubes
- 1 lb Ground Beef
- 1 lb Italian Sausage (Mild or Hot), casing removed and crumbled
- 1 ea Red Onion
- 1 ea Red Bell Pepper
- 2 ea Garlic Cloves, chopped
- 1 ea Beer, 12 oz.
- 1 can Rotel
- 1 can Tomato Paste, 10 oz.
- 1 can Tomato Sauce, 8 oz.
- 1 cup Beef Broth
- ½ cup Chili Sauce
- 1 tbsp Chili Powder
- 1 tbsp Ground Cumin
- ½ tsp Ground Cayenne Pepper, optional
- 2 tsp Salt
- 1 can Red Kidney Beans, drained
- 1 can Black Beans, drained
- 1 can White Cannellini Beans, drained
Instructions
- In a large stock pot or Dutch oven, cook all three meats together over medium heat until browned. Drain off the grease and season to taste with salt and pepper.
- Add onion, bell peppers, and garlic. Cook until tender, about 5 – 7 minutes.
- Add all other ingredients. Cook over low to medium heat for approx 1 – 1-1/2 hours.
- Serve chili in big bowls and garnish with your favorite toppings. Enjoy!
