Mix butter, sugar, egg, and flavorings until blended.
In a separate bowl, combine flour, baking soda, and cream of tartar.
Add the dry ingredients to the sugar mixture and mix until blended. The dough may be crumbly. Chill for 2-3 hours.
Divide the dough in half and roll it out on a lightly floured board with a rolling pin to desired thickness (typically between ¼" to ½ "). Cut out cookies with cookie cutters.
Bake at 375° on a parchment-lined cookie sheet for approximately 6 minutes.
Remove from oven and let cook for approximately 1 minute on the pan before carefully transferring to a wire rack. Cool completely before frosting with your favorite icing.
